Ingredients

For Banana Cake

  • 90 grams butter, soft
  • ⅔ cup brown sugar
  • 1 egg
  • 1 ¼ cups flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large banana overripe, mashed
  • ⅓ cup buttermilk*
  • ⅓ cup walnuts, chopped

For Lemon Glaze

  • ¾ cup icing sugar
  • 1 teaspoon butter
  • 2 tablespoons lemon juice
  • Lemon zest

Instructions

For Banana Cake:

  1. Combine all ingredients of cake (except walnuts) in a bowl.
  2. Using an electric mixer, beat at low speed until all the ingredients are combined.
  3. The beat on medium speed until the mixture is light and smooth.
  4. Stir in the walnuts.
  5. Bake in a preheated oven for 25-30 minutes at 350 F.
  6. Cool and glaze with lemon icing.

For Lemon Glaze:

  1. Mix all ingredients in a small saucepan.
  2. Glaze the cooled cake.

Notes

* You can make your own buttermilk. In a 1/3 measuring cup, add 1 teaspoon vinegar or lemon juice and fill the remaining with milk of choice. Stir and let the mixture rest for at least 5 to 10 minutes and then use as needed.
